The introduction of Edomae-sushi (nigiri-sushi) to the United States in the 1960s launched an evolution of sushi cuisine. Starting with the California roll, 'American-style' sushi maintains traditional nigiri, maki and temaki roll form, but incorporates new menu items and flavor fusions. Today, it is common - almost expected - that American sushi chefs create 'signature rolls' with funky names for their menus.
