The first sushi bars to open in the United States served traditional Edomae-sushi. But within a few short years, with the creation of the California roll and a growing emphasis on catering to the 'American' pallate, sushi cuisine began a rapid evolution of presentation, style and flavor.
Today's sushi restaurants increasingly incorporate flavors from fusion and delicacy menus or feature hip upscale uramaki-style rolls. Sushi purists can still find traditional restaurants, primarily serving small communities in Little Tokyo and San Francisco's Little Osaka. One look at the top sushi restaurants in each region and one quickly realizes that sushi is a diverse cuisine with many interpretations, and plenty of room to grow.
